FOCUS ON SAFFRON
Saffron is a spice that you get from the flower Crocus Sativus. The crimson coloured, delicate saffron threads are hand-picked from the flower, then laid out to dry in the sun.
Saffron's unique taste is due to the fact that it contains 150 volatile and aromatic compounds.
Almost all of the world's saffron grows in a belt, from Spain in the west, to Kashmir in the East.
It appears in dishes such as Iranian khoresh and jeweled rice, Italian risotto, Spanish Paella, French bouillabaisse and Indian Biryani. Learn how to use this spice as it's such a wonderful addition to any kitchen inventory.
