Ingredients: enough for 6 people
6 Pieces of Chicken
3 cups of Basmati Rice
1 ½ cups of Carrots (frozen for convenience)
1 cup of Green peas (frozen for convenience)
1 pound of Ground beef
½ cup of golden raisins
½ cup of almond half’s
1 Cube of bouillon
1 tablespoon of Cinnamon
1 tablespoon of Turmeric
2 tablespoons of Cardamom
2 tablespoons of 7-spice or Allspice
(mix all the spices above together, it will be used for the chicken, rice and ground beef)
1 cup of Olive oil (½ cup of oil for the chicken and ½ cup to fry the almonds and the ground beef for the garnish)
4 ½ cups of Water (for the rice)
½ cup of canola oil (for the rice)
1-For the chicken: wash the chicken and dry, put it in a oven pan, use ½ of the mixed spices, salt, black pepper and olive oil, mix it all together with the chicken. Place it in oven for 30 minutes on 400 degrees or until fully cooked, put it on broil to give the chicken a crispy finish. *2-for the rice: In a pot add 4 ½ cups of water, mix in ½ cup of carrots, ½ cup of green peas, the rest of mixed spices (leave about a spoon to use for the ground beef), salt, black pepper, bouillon and canola oil wait till the water start to boil and add the rice, let it cook on medium heat for 5 minutes then on low heat for 15 minutes. Saffron is optional if you would like to add more color to the rice, but the turmeric is enough.
3-use a little oil to fry the almonds till golden brown, separately fry the golden raisins, then separately fry ½ cup of peas and 1 cup of carrots. These will all be used for the garnish.
4-mix the ground beef with salt, black pepper and the reminder of the mixed spices and sauté in a frying pan, this will also be used for the garnish.
5-In a medium size platter evenly spread out the rice, place the chicken on the rice then spread the ground beef over the rice. Next add the carrots and green peas and last put the almonds and raisins.
