ᐯEGᗩᑎ TᕼᗩI ᑕᑌᖇᖇY ᗯITᕼ ᑕᗩᑌᒪIᖴᒪOᗯEᖇ & ᑭOTᗩTOEᔕ. 🌱🍛
~ 1 big onion, chopped
~ 1 TBsp minced garlic
~ 1 TBsp minced ginger
~ 100g red curry paste
🌱 Fry in olive oil to release the heat and flavours. Then add and stir the vegetable in order while coating with the paste.
~ 3 medium tomatoes, chopped in 4 quarters.
~ 8 small/medium potatoes, chopped in 4 quarters.
~ 2 carrots, chopped
~ 500g frozen cauliflower (cheaper)
~ 4 vegetable stock cubes dissolved in 2 -3 cups of boiled water.
🌱 Add in 2 tins of coconut milk, making sure you don’t tip in the clear liquid at the bottom of the can. Let it come to simmer then add...
~ 2 sliced red capsicums/ red peppers
~ basil leaves.
~ Season with salt and pepper
🌱 Simmer till potatoes are cooked, then add..
~ 100g or 2 handful of spinach and stir it in. Garnish with more basil leaves. Serve it with brown or jasmine rice. Enjoy!💛🧡
Bare in mind this is a huge recipe. Mine may just be a little simpler than the original. Although using majority of the ingredients.
