The image of my beautiful, bountiful spinach shrinking down to near invisible always makes me a little sad.
But is raw spinach really better than cooked??
🌱 Raw spinach contains a compound called Oxalic Acid, which actually may make it harder for us to absorb calcium and iron during digestion. But, Oxalic Acid is broken up once the spinach is cooked.
🌱 Raw spinach does however, make Folate, Vitamin C, Niacin, Riboflavin, and Potassium more bioavailable than cooked spinach.
🌱 Cooker spinach, will be higher in Vitamin E, Protein, Fiber, Zinc, Thiamin, Calcium & Iron.
Feeling more confused than before?? Well, the bottom line is this: Spinach is just really, really good for you, whether it’s raw or cooked. If you can, try to eat it both raw and cooked, but if you can only tolerate it one way, then do that!
Most of us don’t eat enough vegetables anyway, so the best way to eat them is the way in which you will enjoy them!
